WEEK 4
So ladies, I was a little late in getting this up but when you only have yourself to cook for you need to coax others to come over and share. Below is the steak with chimichurri and edamame salad (I threw a little cous couse salad on there, too) with recipes :)
You can prepare the steak however you'd like but since the chimichurri is so flavorful I just seasoned it with salt and pepper and grilled. The following is for the chimichurri sauce...throw everything in a food processor or blender and you're done!
1 cup parsley leaves, about 1 bunch, stemmed
4 garlic cloves, rouchly chopped
1 small jalapeno, stemmed, seeded, and roughly chopped (more if you like it really hot)
3 Tbsp EVOO
2 Tbsp freshly squeezed lime juice (I like a little more)
1/2 tsp crushed red pepper flakes
1/4 tsp ground cumin
1/4 tsp salt
Edamame Salad
~Combine all ingredients in a bowl and stir. Chill until you eat. This salad tastes better or plain depending on how strong the radishes are and how good the cilantro is. BUY FRAGRANT CILANTRO!
1 bag (16 oz.) frozen shelled edamame (run under cold water in a colander to unfreeze)
1/4 c seasoned rice vinegar
1 Tbsp vegetable oil
1/4 tsp salt (or to taste)
1/8 tsp freshly ground black pepper (or to taste)
1 bunch radishes (8 oz) cut in half and thickly sliced
1 cup loosely pack chopped fresh cilantro leaves
Molten Chocolate Cake
5 oz. bittersweet chocolate (at least 60% cacao), plus 4 chucks for the cake centers
2 Tbsp butter
2 eggs
2 egg yolks
1/4 c sugar
Pinch of salt
2 Tbsp flour
1 tsp vanilla extract
~Preheat oven to 425 F. Lightly butter four 6 oz ramekins or custard cups.
~Bring a few cups of water to boil in a medium saucepan over LOW heat. Place a glass mixing bowl over the pan (but not touching the water) and add the chocolate and butter. Cook, stirring occasionally, until both the chocolate and butter have fully melted. Keep warm.
~If you can, while melting chocolate and butter, use an electric mixer (KitchenAid) to beat the eggs, yolks, sugar, and salt until pale yellow and thick, about 5 minutes. STIR in the melted chocolate, the flour, and vanilla.
~Pour the mixture into the prepared ramekins. Stick one good chunk of chocolate in the center of each ramekin. Bake the cake on the center rack (put on baking sheet for ease) for 8 to 10 minutes (much closer to 8) until the exterior is just set (the center should still mostly be liquid. The cakes can be eaten straight from the ramekins, but it's more dramatic to slide them onto plates (after letting them rest a minute or two), where the molten chocolate can flow freely. I thought I'd give you guys the ingredient list for my recipe...Steak with Chimichurri Sauce and Edamame Salad. Dessert is Molten Chocolate Cake!!
Steak and Chimichurri Sauce
The receipe calls for flank steak but in my opinion get whatever kind you want (or can afford, which is usually the case with us:)
1 bunch parsley (I use curly)
Garlic
Shallots
1 jalapeno
Olive Oil
Lime
Red Pepper Flakes
Ground Cumin
Salt
Edamame Salad
1 bag (16 oz.) frozen shelled edamame (right with the frozen veggies)
Rice vinegar

Salt/Pepper

Ramekins (6 oz...like $2 ea. at Target)
5 oz. bittersweet chocolate (at least 60% cacao) plus four chunks for cake centers

I know all this sounds absolutely horrible for you (and who cares if it is?) but I got them all out of The South Beach Diet book (Edamame Salad), Bob Greene's Best Life (Steak and Chimichurri) and Cook This, Not That (Cake) so it's healthier than it could be for you - eat without guilt!
